
got the 13 piece set from bed bath and beyond, turns out to be a really nice knife set cuts awesome especially after sharpening. can’t imagine anyone complaining about a set for the cost. Best bang for the buck I ended up getting every single knife in this set. I’m not by all means a master chef but when it comes to getting the best for your money after 3 different knife sets I came to a conclusion as seeing these as the best for the money. Don’t really need all the knives in the katana line up but when I saw the knives performance first hand I jumped online and bought every one! Don’t be misled by any cons about these knives, you can’t get more for the money!

I have owned countless knifes that claimed to be “good”. Needless to say, almost every knife I have owned has been a disgrace until now. The Calphalon 6″ Chef (knife) is a superb all purpose knife with several notable features.
First off, the Japanese steel construction is not only very attractive, but also extremely durable. The knife is relatively light and is embedded with a very comfortable, yet ergonomic handle. Note, the knife feels well balanced and non-strenuous in your hands, even under various vigorous chopping, cutting tasks.
I used the knife to cut several vegetables, raw meat, along with raw fish; so far the knife cuts through meat as if it was butter. I had exceptional control while gouging through my various products. You must be sure to wash and dry the knife immediately after use (only hand washing is permitted). Furthermore, this knife is relatively inexpensive; considering the other brands such as shun, this knife is a bargain. Lastly, this product is backed by Calphalon’s lifetime warranty.
All in all an excellent product, and I would highly recommend it. The knife has exceptional sharpness, craftsmanship, and style, definitely worth the money.
After having these knifes for about a year they stared to chip and crack on the blade edges. They were very-well cared and always hand washed. We have send several emails to Calphalon and tried calling them and recieved no response from Calphalon it appears they just could care less.
I would strongly recommend staying away from any of their products!!!!!!
I found this knife in a local store and used a coupon to reduce the price to give the knife a try. It is the sharpest knife I have ever bought or used, and I have used a good number over the years including various German and other excellent brands. The balance and appearance are outstanding. The layered steel is attractive and interesting, but I don’t know how much it contributes to the actual cutting, but it looks great. The tapered bolster reminds the user to grip the knife properly (if you are of the “pinch” grip persuasion). It is very easy to use with all kinds of food and cutting chores. It has held its edge with pretty frequent use for well over a year. I like to keep my knives sharp, and so far, this has not needed sharpening. I have bought other Katana knives piecemeal since purchasing this one and have really had good luck and experiences with all except the 5.5″ serrated knife: it seemed to shred rather than slice/saw, so I returned it. I have five other Katana knives and plan to build my set piece by piece. I have had absolutely no rusting or cleaning problems, although I do try to clean all my knives as soon as possible after use. Highly recommended for sharpness, balance, use, design, and appearance.
I loved this knife for two weeks. I took excellent care that it remained dry, and in a block. However, after just a few weeks, I noticed oxidation spots and a split on the edge of the knife. I didn’t have any warranty information with this gift, but according to another person’s review, the same thing happened to them and they’ve been trying to contact Calphalon, and “they don’t seem to care”. So I don’t recommend spending money on something you’ll use for two weeks before it starts going south.
Beautiful knife. Japanese steel holds a great edge. These are a little trickier to sharpen when the edge does eventually dull, so make sure you know what you’re doing. You need to hand wash and dry immediately – if you let air dry you’ll get spots on the blade that are very difficult to remove . (You should hand-wash and dry any good knife, but this isn’t clearly stated in the product description for this series).
Just some things to consider before buying…
Overall an excellent knife series. When sharp, probably the sharpest knife I’ve owned. Holds an edge longer than most. And they’re wicked pretty with the ‘marbled steel’ look.
First, this blade is made in China, if that matters to you. Second, I found the shape to be a little awkward. The blade edge is low and the spine comes down to meet it. It feels a lot like a sheep’s foot blade. In that sense, I had some unhappiness trying to penetrate food.
The steel is very hard and will stay sharp for a long time. It is clad, though, and not damascus. It is simply for looks and does not add any benefits that a paring knife would need. VG 10 is the core and is great steel.
The artistic shape of the handle comes down to the blade but “terminates” past the heel (towards the tip). It doesn’t become apparent until you try to sharpen it and the sharpener is hitting the handle. I wasn’t a big fan of that.
Overall, I wouldn’t buy it again, especially for the price. It certainly cut well and was easy to clean, but the shape of it irritated me in more ways than one. In that sense, I would caution you from all the Calphalon Katana series. Make sure that you would accept the handle shape, for holding and sharpening.
Loved the knife as it was easy to sharpen, had a continuous handle that gripped well and no parts to fall apart.
Trouble with the 3.5″ is too small to make much of a cutting difference. I wouldn’t even call this a paring knife, but a mini-cutter…which to me was so worthless that I went out and bought the 6″ chef’s cutter Katana and LOVE that. Use it exclussively..
now, wife swore she liked this 3.5 incher….and since I used it to cut open a box the other day: I think I ‘accidently’ threw it out with the box, she has stated she wants it back.
so bottom like: guess it has some value for small items or persons with small hands who don’t cut much…I’m the cook in the house.
but, if you have a wife like mine: buy one.
I have the entire set and I like the paring knife so much that I bought a second one for when there are two cooks in the kitchen. Neither one of us want to use another knife for jobs requiring a small knife!!!!!! So comfortable you can work continuously for a long time without cramping up. Extremely sharp and holds it’s edge very well. And the folded steel gives it a wickedly beautiful look.
I bought this knife recently and was surprised by what I got for [...] bucks. It is aesthetically pleasing (the wood grain pattern of the steel makes it look like a much more expensive knife), solidly made, and really really sharp, like, you can shave with it. The handle flares wide at the butt-end and flattens on top to accommodate the heel of your palm. Love the design, way beyond satisfied with the quality.
