What apple variety is crispiest and freshest and best to buy during the winter in California?
I usually buy Gala apples. Least week Apple Parer I bought a few and all of them were mushy. They must have been stored in a warehouse for months and months. Which apples do you buy in the winter? I'm in Central California. Texture is my biggest concern. I like a fresh, crisp apple. Thank you.

Used this on a dull blade and got it shaving the hairs off my arm fairly quick. It is somewhat awkward, holding the clamp till you get the hang of it.
You have to know the angle of the bevel. I found the best way is to mark the edge with a sharpie and run it through once with no oil. Inspect and make adjustments if needed.
Best used for blades about 6″ or smaller.
