
This has been my favorite knife for years — I had it so long I can’t recall when I got it. I already had an excellent set of Sabatier knives, but the handles were a bit thin and had somewhat sharp corners. One day I had occasion to use a Hencklels Four-star, and instantly fell in love with the voluptuous handle. It felt soooo good in my hand. Note that I have largeish hands, if you have smaller hands this might not be the knife for you.
I already had a 10″ chef’s knife, so I chose this 6″ “sandwich” knife (that’s what they called it back then). It has been my workhorse for years. I can put an edge on it that will shave hairs off my arm (but not quite off my face
. Alas yesterday the blade snapped while cutting a sweet potato. No bending or twisting, just pressing down pretty hard, and bing! Mind you it had received daily use for well over a decade, if not two.
Now that I have to replace it, I think I’ll go with an 8″ blade. This 6″ size was just a tad small for general purpose use, and I have plenty of other smaller knifes. I may get the 8″ equivalent of exactly this knife, but am also considering the Wsthof Grand Prix II 7-Inch Fine Edge Santoku Knife. I’m hoping that design will keep my knuckles from bumping into the cutting board.
Here’s a free tip: when pushing food around on the cutting board, use the BACK side of the knife. Don’t drag the sharp edge across the board.

After buying a bread machine, we now no longer buy our bread. Everyone (children and adults) cuts their own bread, at the table, to the slice thickness they prefer. With my old bread knives, the slices quite often came out looking like an ocean surface (waves and all). After upgrading to this Henckel (to match my other Henckel knives), we can now all cut straight slices. It doesn’t matter if the bread just came out of the bread machine (yum) or if the bread was baked yesterday. No longer is the French bread (hard crusts) squashed while we try to slice it. This is definitely the “best thing since sliced bread”!
This knife’s best at slicing tomatoes and other veggies. It’s a bit short for cutting big peasant loaves, and the straight blade makes it harder to cut at an angle down through the bread, since the sharp point, while great for starting a cut through an obstinate veggie skin, can get stuck in your cutting board. The serrations work great, however, slicing through both crust and soft inner breadness.
Been buying Henckel knives and scissors for over 20 years. Weve never been disapointed and this is no exception. Sort of a compact chef’s knife (which we think a little clumsy), the shape and balance of this knife is perfect for my hand and even for my wife as well, which is unusual. The overall finish and quality is typical Henckel – a lifetime tool, in my opinion.
Everything that I wanted in a utility knife. Hefty handle, good steel and a blade wide enough to be useful for many slicing and chopping needs, but not so wide as a french knife.
I have all Henckels 4 star knives in my kitchen, but this is the one that I come back to over and over. Unfortunately, I have lost mine in a recent move and it’s on the top of my “wish list” for Christmas this year!!!! I really miss it!
It is comfortable to hold and you can’t beat the stainless steel on Henckels knives.
The 5 star line is also excellent with a comfortable handle. You can’t go wrong buying from either line.
Someone stole the utility knife from my Henckel’s set while I was in college. I finally replaced the knife, but have found the utility knives to be only moderately useful. When prepping I use paring and chef or Santoku knives and rarely anything else. This utility knife is the one I grab for making sandwiches and for minor vegetable prep, but it just feels sort of limited.
I have also been a German knife and Henckel knife fan for many years, but have recently moved more towards Shun knives. The sharper angle on Japanese knives is noticeable and I enjoy have a razor blade knife when doing food prep.
The Henkels were not broken, are still in use, and are excellent knives, but the competition from the Japanese knives is a good wake up call.
This is a really useful knife – sharp, well balanced, and fits nicely in my rather small hands. I have a really inexpensive knife this size at work that I use for cutting apples and the difference between them is remarkable – you really get what you pay for, and this knife is worth every penny!
My mother insisted I buy this EXACT knife because it’s the exact same one she got when she was first married 27 years ago. Sure enough, it came and looks and feels exactly the same as the knife I’ve used for 20+ years when at my parents’ house. So I know firsthand that this knife wares amazingly — my brand new one looks exactly the same as the 27 year-old one. And cuts so well — the perfect knife for everyday use with meats, veggies, fruits, etc. I’m glad I took the advice to get it. It really is worth the money.
After about 10 years using this knife, I recently broke the tip in a coconut accident. I know I was asking a little too much of it but it goes to show the expectations I had for it after so many years of use. I looked around at replacement sets, even much more expensive ones, but ultimately I opted just to replace this knife.
It came very sharp, cut myself twice in the first week. I continue to use it every day as it is the most versitile of all my knives. It is particularly useful in fine fruit cuts which I seem to be doing every day for my 2 childen.
I bought this knife based on its high rating. Sorry to say that I can’t stand it. It’s not ergonomically correct for my hand and is very uncomfotable for me to use. And the blade actually has very slight knicks in the cutting edge.
I got this knife a couple years ago in a Macy’s store, but it’s the same one as this. I must say, in my over two years of constant use, I just had it sharpened for the first time this last weekend and could not be more happy with it. The knife is heavy enough to not feel flimsy, yet balanced so it’s not awkward heavy. I used to use a chefs knife as my main, but now it rarely sees the light of the kitchen, as the santoku has taken over as my main knife. With this thing, a serrated knife, and a paring knife, you won’t need any other knives in your kitchen unless you have some special need for a specific type of knife.
I’ve owned Henckels for years, regularly defaulting to my trusty 8 inch Chef’s Knife (which I thought was extremely sharp until I used this knife). However, after purchasing the Santoku, I find myself using it for everthing. It is the sharpest knife I have ever used. The indentations on the blade make it ideal for chopping things that normally stick to other blades (cheese and veggies). Although the blade is thinner than my other Henckels, it still feels very sturdy and substantial when held in the hand. I would highly recommend this knife to anyone who is serious about their cutlery and plans on taking the necessary steps to maintain this great knife.
This knife is very nice. Works wonderfully for cutting vegetables and meat. I have had the Henckels Four Star series for 10 years, and am very happy with my various knife purchases. It is a great series, the blades cut well, and the handle is a good shape for holding.
i bought this knife for my BFF who didnt own a decent knife. every holiday she would ask me to carve, or help in the kitchn cutting something, all she had were knives that would have trouble cutting butter in July. after 25 years of friendship, she deserved a decent knife and i choose this one. we buy this knife at work for our staff when they complete their training and it’s just a nice all around knife.
You will not be disappointed with this knife. I already owned another Henckel knife (the 6-inch sandwich knife) and everyone in my family fought over it. So we decided to get another Henckel’s knife. We settled on the Chef’s knife. The biggest difference is that the Chef’s knife has a more rounded blade which makes chopping and slicing easier. It’s perfect for chopping vegtables. It fits nicely in the hand and is well balanced. Henckel’s quality is superb. Just don’t put it in the dishwasher (even though the instructions say you can). I already want another one. Perhaps the 8-inch knife will be next.
I had said knife 20 years, but replace it because a home-care-giver had stolen it! (see…they know a good knife when they see it!)
I bought this for my wife for Christmas from CuttleryAndBeyond and it never came. No communication from them whatsoever. I called them in mid-january and they said they cancelled the order and wondered if I wantewd to wait for them to get new ones in stock.
This knife is a perfect size for most food prep needs.
